When I plan on being out and about, I like to make sure I bring along my own snacks or meals if I will be gone a while. It’s easy to rely on the simple PB&J and apple combo, but sometimes I like to bring a meal that has a bit more substance and something to really look forward to. Plus, I am always trying to load my diet with vegetables where I can. On my last canoe trip to Chassahowitzka River, I packed my portable avocado bowl. Delicioius! It stayed fresh packed in a small, plastic container in my soft cooler bag.
This is a quick meal to prepare before going out, and the healthy fats and protein kept me fueled for my trip!
- 1 ripe avocado
- 1 plum tomato
- 1 hard boiled egg
- 1 lime
- salt and pepper
Cube the avocado, tomato, and egg and place in a bowl or container. Squeeze the juice of the lime over the mixture and sprinkle on salt and pepper to taster. Gently mix to distribute the lime juice.
